  • 1 cup of celery, chopped
  • 1 green bell pepper, chopped
  • 400g of sausage, cubed
  • 1can (400 g) of stewed tomatoes
  • 1 teaspoon of thyme
  • 2 tablespoons of Cajun seasoning
  • 2 tablespoons of flour
  • 450ml of vegetable broth
  • 270 g of frozen shrimp, thawed
  • 2 tablespoons of parsley, chopped
  • 2 tablespoons of green onions, chopped

Directions

  1. Start by cracking a joke and getting your little one to laugh.
  2. Start prepping the ingredients while you’re all still happy. Mince the garlic, chop the onions, celery, and bell pepper. Cube the sausage.

  3. In a large pot or Dutch oven, heat the oil over medium heat. When hot, add in the garlic, onions, celery, and bell pepper. Cook for about 5 minutes, stirring often. After, add in the cubed sausage and continue cooking for 8-10 minutes.

  5. Sprinkle the flour over the ingredients and stir to combine it all. Add the vegetable broth and bring to a simmer.

  6. Add in the shrimp at the end. Simmer for 8-10 minutes.

  7. Finally, sprinkle the parsley and green onions on top before serving.
