Ingredients

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 large onion finely chopped
  • 1 kg of beef chuck, cubed
  • 2 tablespoons of Spanish Paprika
  • 500mL of beef stock
  • 2x 400g cans of diced tomatoes
  • 2 bell peppers, chopped
  • 2 potatoes, peeled and diced
  • A handful of parsley, finely chopped

Directions

  1. Heat the olive oil in a heavy-based pan and add the onion and garlic. Cook until the onion is soft and starting to brown.

  2. Add the beef cubes, season with salt and pepper and cook until nicely browned.

  3. Now add the Spanish Paprika and stir to combine.

  4. Pour in the beef stock, canned tomatoes and bring the mixture to a boil.

  5. Reduce the heat and simmer for 1 hour, stirring occasionally.

  6. Add the bell peppers, potatoes and parsley and simmer for another 30 minutes.

  7. Adjust the seasoning to taste.

Serve this Goulash with a crunchy, fresh green salad, some creamy mashed potatoes, or some fluffy boiled rice. Enjoy!
