Ingredients
- 250 g Gulab Jamun (unsweetened)
- 120 ml full-fat milk
- 120 ml coconut milk
- 2 tablespoons cornstarch
- 30 g castor sugar
- 1 teaspoon vanilla extract
- Pinch of ground cardamom
- Pinch of ground nutmeg
Directions
- Preheat oven to 375°F (190°C).
- Place the gulab jamun on a lightly greased baking sheet.
- Bake for 15 minutes or until golden and crisp.
- Set aside to cool.
- In a medium saucepan, combine the milk, coconut milk and cornstarch.
- Heat over medium heat and whisk continuously until the mixture begins to thicken and boil.
- Reduce heat to low, add the sugar and stir to dissolve.
- Stir in the vanilla, cardamom and nutmeg.
- Let cool for 5 minutes.
- Transfer the mixture to a blender, add the cooled gulab jamun and blend until completely smooth.
- Pour the mixture into an ice cream machine and churn according to manufacturer’s instructions.
- Place the churned ice cream into an airtight container and freeze for at least 4 hours or overnight.
