Ingredients

  • 250 g Gulab Jamun (unsweetened)
  • 120 ml full-fat milk
  • 120 ml coconut milk
  • 2 tablespoons cornstarch
  • 30 g castor sugar
  • 1 teaspoon vanilla extract
  • Pinch of ground cardamom
  • Pinch of ground nutmeg

Directions

  1. Preheat oven to 375°F (190°C).
  2. Place the gulab jamun on a lightly greased baking sheet.
  3. Bake for 15 minutes or until golden and crisp.
  4. Set aside to cool.
  5. In a medium saucepan, combine the milk, coconut milk and cornstarch.
  6. Heat over medium heat and whisk continuously until the mixture begins to thicken and boil.
  7. Reduce heat to low, add the sugar and stir to dissolve.
  8. Stir in the vanilla, cardamom and nutmeg.
  9. Let cool for 5 minutes.
  10. Transfer the mixture to a blender, add the cooled gulab jamun and blend until completely smooth.
  11. Pour the mixture into an ice cream machine and churn according to manufacturer’s instructions.
  12. Place the churned ice cream into an airtight container and freeze for at least 4 hours or overnight.
