This dish is full of flavour, colourful vegetables and light, creamy hummus. It’s simple, nutritious and suitable for children, with no added salt or sugar!

Ingredients

  • ¼ of a medium aubergine (150g)cut , into 0.5cm circles
  • 2 medium carrots (120g), cut into thin strips
  • 4 baby courgettes (160g), cut into 0.5cm circles
  • 2 tablespoons (28ml) of olive oil
  • 2 tablespoons (28ml) of lemon juice
  • 2 wraps (40g each)
  • 2 tablespoons (28ml) of hummus (store bought or homemade)

Directions

  1. Preheat the oven to 200°C (400°F)
  2. Place the aubergine and courgette circles on one side of an oiled oven trayand the carrot strips on the other. Drizzle with 1 tablespoon (14 ml) of olive oil and the lemon juice. Mix well with your hands so all the vegetables are evenly covered.
  3. Bake the vegetables for 10 minutesturning them over once. You can add a joke about why the vegetables had to turn- Why did the vegetable need to turn around? So it could see the other side of the oven!
  4. When the vegetables are cooked and slightly golden, take them out of the oven and set aside.
  5. Heat the remaining olive oil in a frying pan over a medium heat. When the oil is hotadd one wrap at a timeand cook for 2-3 minutes on each side until lightly golden and crispy. Heywhy did the wrap have to go to cooking school? So it could learn how to become a wrapstar!
  6. To assemble the wraps, spread 1 tablespoon of hummus in the middle of each wrap.
  7. Place half of the vegetables on top of the hummus in each wrap, then carefully fold and enjoy warm.

Notes

This dish can be eaten as is, however you could use other vegetables like bell pepper, onion or red cabbage to add more crunch and flavour. It’s also delicious with a sprinkle of feta or goats cheese. Enjoy!
