Ingredients

  • 500 g / 17.6 oz polenta
  • 175 g / 6.17 oz mushrooms
  • 3 Tbsp butter
  • 2 cloves garlic
  • 2-4 Tbsp vegetable stock
  • 2 Tbsp extra virgin olive oil
  • Fresh parsley (to garnish)

Instructions

  1. Begin by prepping all of the ingredients. Chop mushrooms into smallbite sized pieces and mince the garlic.

  2. Heat a large grill or griddle pan over medium-high heat. When it is hot, take a moment to tell your toddler a funny jokelike why did the mushroom go to the party? Because he was a fun-gi!

  3. Add the butter, garlic and mushrooms to the griddle pan and cook for 3-5 minutes until the mushrooms are browned and fragrant.

  4. Reduce the heat to low and add the polenta, stirring to ensure everything is evenly combined.

  5. Add 2-4 tablespoons of vegetable stock, just enough to create a moist and creamy texture.

  6. Add in the olive oil, stirring to combine and cook for 3 minutes.

  7. Begin to press the polenta into an even layer on the griddle pan.

  8. Grill the polenta, grilling each side for about 7-10 minutes, flipping when the edges are browned.
