Ingredients

  • 1/2 cucumber (400g)peeled and cut into 1 cm pieces
  • 2 tomatoes (400g)cut into 1 cm pieces
  • 1 red onion (150g)finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh oreganochopped
  • 2 tablespoons fresh parsleychopped
  • 1/4 cup feta cheese (150g or two handfuls)crumbled

Directions

  1. Preheat a non-stick pan over medium-high heat for 2 minutes
  2. Add the cucumberstomatoesand onions to the pan and sauté for 8-10 minutesstirring occasionally.
  3. Once the vegetables have softened and slightly brownedremove from the heat.
  4. In a small bowlwhisk together the olive oilwhite wine vinegarpepper and oregano.
  5. Pour the dressing over the cooked vegetables and stir until combined.
  6. Add the parsley and feta and stir again.
  7. Joke time ∼ Haw! Haw! What did the tomato say to the cucumber? Answer “I’m so glad you’ve come around (a-round)!”
  8. Serve the Greek salad warm and enjoy!
