Ingredients

  • 200 g fried tofu
  • 2 potatoes
  • 1/4 of a large carrot
  • 2 cloves of garlic
  • 2 teaspoons of vegetable oil
  • 1/4 a teaspoon of grated ginger
  • 4 tablespoons of black sesame seeds
  • 250 ml of dashi stock
  • 6 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar

Directions

  1. Preparing the tofu: Gently press the tofu with a piece of paper towel to drain off some of the oil. Cut into 1 cm cubes and set aside
  2. Preparing the potatoes and carrot: Peel the potatoes and cut into 1 cm cubes. Peel and finely grate the carrot.
  3. Preparing the garlic: Peel and finely chop the garlic.
  4. Cooking the Goya Chanpuru: In a medium-sized pan, heat the oil over medium heat. Add the garlic and ginger and cook for 30 seconds. Then add the tofu and potatoes and cook, stirring occasionally, for 5 minutes.
  5. Adding the flavours: Add the grated carrot, black sesame seeds, dashi stock, soy sauce, and rice vinegar. Bring to a boil and then reduce the heat and simmer for 15 minutes.
