Ingredients

  • 2 cups cooked Japanese rice
  • 1 teaspoon of seasoned rice vinegar
  • 1 carrot (grated)
  • 2 tablespoons of sesame seeds
  • 2 tablespoons of soy sauce
  • 2 tablespoons of white wine
  • 2 tablespoons of sesame oil
  • ½ cucumber (sliced into thin strips )
  • 2 cups of cooked, peeled and deveined shrimp
  • 1 avocado (pitted and sliced into thin strips)
  • 4 large sheets of nori seaweed

Directions

  1. Begin by taking two cups of cooked Japanese rice and placing it in a large bowl.
  2. Add the vinegar, sesame seeds, soy sauce, white wine and oil to the bowl, and mix until all ingredients are evenly distributed.
  3. Take a small saucepan, place it on medium heat and add the shrimp. Allow the shrimp to cook for 8-10 minutes, until they’re cooked through.
  4. Meanwhile, grab a bamboo sushi rolling mat and place a sheet of nori seaweed on it.
  5. Spread a thin layer of the prepared rice mixture over the seaweed, leaving about a quarter inch of the top and bottom edges clear.
  6. Place a few strips of carrot, cucumber and avocado in the center of the nori.
  7. Using the mat as a guide, begin rolling the edges of the nori towards the center, forming a log.
  8. (Funny Family Joke: As you roll your sushi, you could say: “I’m Rolling Rolling Rolling in the Sushi”)
  9. Now take a sharp knife and cut the sushi into 4-5 pieces.
