Ingredients

  • 2 cups of soybean flour: A type of starch made from finely ground white soybeans.
  • 1 cup of kuzu root starch: A starch made from the roots of a Japanese arrowroot plant.
  • 2 cups of cold water
  • 2 tablespoons of sesame seeds (optional)

Directions

  1. Gather the ingredients. Measure out and prepare the soybean flour, kuzu root starch, cold water, and sesame seeds, if desired.
  2. Prepare the dofu base. In a medium bowl, mix together the soybean flour and kuzu root starch. Add in the cold water and stir together until well combined.
  3. Cook the dofu. In a medium-sized pot over medium-high heat, add the dofu mixture and stir continuously using a wooden spoon until it thickens and boils. Joke: Stir it like your life depends on it!
  4. Let it cool. Once the mixture has boiled, remove it from the heat and let it cool. Note: It’s important not to cook the dofu for too long, as it will become too hard and rubbery!
  5. Spread and press the dofu. In a container, press the dofu down and spread it out with the back of a spoon or a spatula. Sprinkle the sesame seeds on top of the dofu if desired.
  6. Serve and enjoy. When the dofu has cooled and become solid, cut it into small cubes, and serve with your favorite side dishes.
