Gigot en croûte

Ingredients
- 1.5 kg (3 lb 5 oz) boneless gigot of lamb
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, finely chopped
- 2 fresh sprigs of rosemary
- 1 teaspoon of ground black pepper
- 2 tablespoons of plain flour
- 2 sheets of ready-rolled puff pastry
- 1 large egg
Directions

Preheat the oven to 180°C (360°F/Gas 4).

Heat the oil in a large ovenproof frying pan over medium heat and add the gigot of lamb. Sear the lamb on both sides until golden brown.

Add the garlic, rosemary and pepper to the pan and cook for 1 minute.

Sprinkle the flour over the lamb and mix it through.

Transfer the pan to the preheated oven and cook for 25 minutes.

Take the pan out of the oven and discard the herb stems.

Cut the puff pastry into two large circles that are slightly larger than the gigot of lamb. Place one of the pastry circles over the lamb and press down lightly.

Using a sharp knife, score the edges of the pastry and cut a small cross into the top of the pastry for a steam hole.

Beat the egg in a small bowl and brush over the pastry.

Place the pan back in the preheated oven and cook for a further 15 minutes, or until the pastry is golden brown and crisp.
