- 500g potatoes
- 3 tablespoons butter
- 500g mixed vegetables like carrots, peas, and green beans
- 400ml vegetable broth
- 2 cloves garlic, minced
- 2 onions, chopped
- 2 tablespoons cornstarch
- 2 teaspoons paprika
- ½ teaspoon ground black pepper
Directions
- Preheat oven to 350 degrees Fahrenheit (176 degrees Celsius).
- Peel and cube the potatoes and place them in a baking dish. Dot the potatoes with butter.
- Bake the potatoes in the preheated oven for 20 minutes.
- Meanwhile, in a large saucepan, heat the vegetable broth. Add the minced garlic, chopped onions, mixed vegetables, cornstarch, paprika, and black pepper.
