  • 500g potatoes
  • 3 tablespoons butter
  • 500g mixed vegetables like carrots, peas, and green beans
  • 400ml vegetable broth
  • 2 cloves garlic, minced
  • 2 onions, chopped
  • 2 tablespoons cornstarch
  • 2 teaspoons paprika
  • ½ teaspoon ground black pepper

Directions

  1. Preheat oven to 350 degrees Fahrenheit (176 degrees Celsius).
  2. Peel and cube the potatoes and place them in a baking dish. Dot the potatoes with butter.
  3. Bake the potatoes in the preheated oven for 20 minutes.
  4. Meanwhile, in a large saucepan, heat the vegetable broth. Add the minced garlic, chopped onions, mixed vegetables, cornstarch, paprika, and black pepper.
  5. Simmer the mixture for 10 minutes.
  6. Add the roasted potatoes to the pot and mix everything together.
  7. Simmer the stew for another 10 minutes.
