Ingredients

  • 4 pieces of boneless white fish fillets
  • 2 small carrots, peeled and finely grated
  • 2 cloves of garlic, peeled and minced
  • 1/2 cup French-style green beans, cut into 1/2 inch pieces
  • 2 tablespoons vegetable or olive oil
  • 1/4 teaspoon smoked paprika (or cumin powder)
  • 1/8 teaspoon black pepper
  • Salt, to taste
  • 4 teaspoons of butter
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon of fresh lemon juice

Directions

  1. Preheat the oven to 375 F (190 C).

  2. In a bowl, mix together the grated carrots, garlic, green beans, vegetable oil, smoked paprika (or cumin), black pepper, and salt.

  3. Lay the fish fillets on a baking sheet and season with salt.

  4. Divide the carrot mixture into four portions and spread it on top of each fillet.

  5. Top each fillet with a teaspoon of butter.

  6. Bake the fish for 18-20 minutes, or until it is cooked through.

  7. Sprinkle the parsley and lemon juice over the fish before serving.
