This is the perfect way to cook a healthy and delicious dinner for your family! This Garlic and Herb Lamb Roast is sure to be a crowd pleaser!

Ingredients

  • 600g lamb leg
  • 1 large clove garlic (cratered)
  • 1 teaspoon fresh chopped rosemary
  • 1 teaspoon fresh chopped thyme
  • 1 teaspoon fresh chopped basil
  • 1 teaspoon olive oil
  • 1/2 teapsoon freshly cracked black pepper
  • 2 tablespoons vegetable stock

Instructions

  1. Preheat the oven to 190°C.

  2. Use a sharp knife to remove any excess fat from the lamb leg.

  3. In a small bowlmix together the garlicrosemarythymebasilolive oiland black pepper.

  4. Rub the herb and garlic mixture all over the lambmaking sure to cover all sides.

  5. Place the lamb in a roasting pan and pour the vegetable stock around the lamb.

  6. Place the roasting pan in the preheated oven and cook for 1 1/2 to 2 hoursbasting every 30 minutes with the pan juices.

  7. Remove from the oven and allow to rest for 15 minutes before serving.

  8. Serve with your favourite side dish and enjoy!
