Ingredients
- 1 large aubergine (400g), diced
- 2 onions (200g)
- 2 carrots (200g), diced
- 4 cloves garlic, minced
- 1 potato (200g), diced
- 1 can of cooked kidney beans (400g)
- 5 tablespoons extra virgin olive oil
- 1 teaspoon of oregano
- 1 teaspoon of basil
- 2 tablespoons of parsley, finely chopped
- 6 cups of vegetable stock

- Preheat your oven to 200C.

Arrange the diced aubergine and carrots on a baking sheet, Drizzle with 3 tablespoons of olive oil and mix until evenly coated. Roast for 20 minutes until lightly golden.

Meanwhile, heat 2 tablespoons of oil in a large pot over medium heat. Add the onions, garlic and potato, and cook while stirring for 8-10 minutes until tender.

Add the roasted aubergines and carrots to the pot. Add the oregano, basil, kidney beans and parsley.

Pour in the vegetable stock. Increase the heat and bring to a boil. Reduce the heat and simmer for 10 minutes.
