Ingredients
- 700g of frozen peas
- 2 potatoes, peeled and diced into 2cm cubes
- 1 small onion, finely diced
- 2 tablespoons of vegetable oil
- 200g of cooked ham, cut into small cubes
- Salt and pepper, to taste
- 2 tablespoons of fresh parsley, chopped
Directions

Preheat the oven to 200°C (392°F).

Place the peas into a large bowl and rinse with cold water, draining any excess water.

Add the potatoes, onion, and vegetable oil to the bowl and stir until everything is well-combined.

Spread the mixture onto a baking sheet and roast in the oven for 15 minutes.

Meanwhile, add the ham cubes to a frying pan and cook over medium heat, stirring occasionally, until the ham is lightly browned.

Once the potato and pea mixture is finished roasting, add the ham to the baking sheet and mix everything together until well-combined.

Add salt and pepper to taste, and sprinkle with the fresh parsley.
