Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 250 g shrimp, peeled and deveined
  • 2 tablespoons (10 g) grated fresh ginger
  • 1 teaspoon (2.5 g) garlic, minced
  • 1/2 medium onion, finely chopped
  • 227 g can of baby corn, drained
  • 2 tablespoons (25 g) rice vinegar
  • 500 g cooked long-grain white rice
  • 2 tablespoons (30 g) low-sodium soy sauce
  • 1/2 teaspoon (1 g) black pepper
  • 2 teaspoons (1 g) sesame seed oil
  • 4 tablespoons (60 ml) water

Directions

  1. Heat oil in a large skillet over medium-high heat.

  2. Add the shrimp and season with 1/2 teaspoon of black pepper. Cook until the shrimp become opaque and firm, about 2 to 3 minutes.

  3. Stir in the ginger, garlic, and onion. Cook for 30 seconds, stirring frequently.

  4. Add the baby corn and reduce the heat to medium. Cook, stirring occasionally, for about 3 minutes.

  5. Add the rice and combine with the vegetables. Cook for 3 minutes, stirring constantly.

  6. Add the vinegar, soy sauce, sesame seed oil, and water. Reduce the heat to low and simmer for about 15 minutes, stirring occasionally.

  7. Taste and adjust seasoning if needed. Serve with white rice.
