Ingredients
- 2 tablespoons (30 ml) vegetable oil
- 250 g shrimp, peeled and deveined
- 2 tablespoons (10 g) grated fresh ginger
- 1 teaspoon (2.5 g) garlic, minced
- 1/2 medium onion, finely chopped
- 227 g can of baby corn, drained
- 2 tablespoons (25 g) rice vinegar
- 500 g cooked long-grain white rice
- 2 tablespoons (30 g) low-sodium soy sauce
- 1/2 teaspoon (1 g) black pepper
- 2 teaspoons (1 g) sesame seed oil
- 4 tablespoons (60 ml) water

Heat oil in a large skillet over medium-high heat.

Add the shrimp and season with 1/2 teaspoon of black pepper. Cook until the shrimp become opaque and firm, about 2 to 3 minutes.

Stir in the ginger, garlic, and onion. Cook for 30 seconds, stirring frequently.

Add the baby corn and reduce the heat to medium. Cook, stirring occasionally, for about 3 minutes.

Add the rice and combine with the vegetables. Cook for 3 minutes, stirring constantly.
