Double ka meetha

Ingredients
- 2 tablespoons ghee
- 2 cups milk
- 2 cups fine sooji (semolina)
- 1 cup all-purpose flour
- 2 cups water
- 1 cup greek yoghurt
- 2 tablespoons cashew nuts, chopped
- 2 tablespoons raisins
- 2 tablespoons almond flakes
- 1 teaspoon cardamom powder
Directions

Heat the ghee in a thick-bottomed pan over medium heat, add the milk and let it simmer for 5 minutes.

Add the sooji and all-purpose flour and stir constantly for 2 minutes until it forms a paste.

Lower the heat and let the mixture simmer for 10 minutes, stirring occasionally.

In a separate pot, bring the water to a boil.

Once boiling, add the mixture from the previous step. Reduce the heat and let the mixture blend in with the water. Let this simmer for 15 minutes, stirring occasionally.

Once the sooji has thickened and the mixture is soft to the touch, let it cool down slightly - this is when you can add the yoghurt and mix it in.

Transfer the mixture into a serving bowl and add the nuts, raisins, almond flakes, and cardamom powder. Mix all the ingredients together gently.

Let the Double Ka Meetha cool down completely before serving.
Recommended Sides
This is a great dessert to serve with lightly sweetened yoghurt, decorated with honey and nuts. Or for a more savoury alternative, serve with a lightly-spiced vegetable korma.
