Ingredients
- 2 tablespoons (30ml) of olive oil, plus extra for later
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 500g stewing beef cut into cubes
- 2 tablespoons tomato paste
- 1 cup (240ml) beef stock
- 2 tablespoons brandy
- 2 bay leaves
- 2 sprigs of fresh thyme
- 1 tablespoon Dijon mustard
- 2 tablespoons (30ml) red wine vinegar
- 2 tablespoons (30ml) Worcestershire sauce
- Salt, to taste
Directions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, stirring occasionally.
- Add the carrots and cook for another 2 minutes.
- Add the beef cubes and cook until golden brown, stirring occasionally.
- Add the tomato paste, beef stock, brandy, bay leaves, thyme, mustard, red wine vinegar, and Worcestershire sauce and stir to combine.
- Bring the mixture to a boil, and then reduce the heat and simmer for about 30 minutes, stirring occasionally.
- Grease a large baking dish with some extra olive oil.
- Transfer the beef mixture to the baking dish, cover with foil, and bake in the oven for 1.5–2 hours, or until the beef is tender and cooked through.
- Remove from the oven and let cool slightly before serving.
