Ingredients

  • 2 tablespoons (30ml) of olive oil, plus extra for later
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 500g stewing beef cut into cubes
  • 2 tablespoons tomato paste
  • 1 cup (240ml) beef stock
  • 2 tablespoons brandy
  • 2 bay leaves
  • 2 sprigs of fresh thyme
  • 1 tablespoon Dijon mustard
  • 2 tablespoons (30ml) red wine vinegar
  • 2 tablespoons (30ml) Worcestershire sauce
  • Salt, to taste

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onion and garlic and cook until softened, stirring occasionally.
  4. Add the carrots and cook for another 2 minutes.
  5. Add the beef cubes and cook until golden brown, stirring occasionally.
  6. Add the tomato paste, beef stock, brandy, bay leaves, thyme, mustard, red wine vinegar, and Worcestershire sauce and stir to combine.
  7. Bring the mixture to a boil, and then reduce the heat and simmer for about 30 minutes, stirring occasionally.
  8. Grease a large baking dish with some extra olive oil.
  9. Transfer the beef mixture to the baking dish, cover with foil, and bake in the oven for 1.5–2 hours, or until the beef is tender and cooked through.
  10. Remove from the oven and let cool slightly before serving.
