Ingredients

  • 150g fresh dates (Take the pit out and cut into small cubes)
  • 50g walnuts (Crushed)
  • 2 free-range eggs
  • 1tsp baking powder
  • 100g whole wheat flour
  • 50ml coconut oil (Melted)

Directions

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a single layer cake tin with butter or coconut oil.
  • In a small bowl, combine dates and walnuts and set aside.
  • In a large bowl, whisk together the eggs, baking powder, and wheat flour until combined.
  • Stir in the melted coconut oil and the date/nut mixture until fully combined.
  • Pour mixture into the pre-greased cake tin and bake in preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool before serving.
