Ingredients

  • 2 large eggs
  • 120 ml vegetable oil
  • ½ teaspoon vanilla extract
  • 120 ml granulated white sugar
  • 120 ml all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 3–4 tablespoons of natural cocoa powder
  • 120 ml non-dairy milk

Directions

  1. Preheat your oven to 350°F (180°C).

  2. Crack the eggs in to a medium-sized bowl.

  3. Add the oil and mix together with a whisk.

  4. Add the vanilla extract and mix it in.

  5. In a separate bowl, add the sugar and carefully measure in the flour, baking powder, and baking soda.

  6. Add the dry ingredients to the wet ingredients and whisk together until it forms a batter.

  7. Divide the batter in to two bowls, one for plain cupcakes and one for chocolate cupcakes.

  8. For the chocolate cupcakes, add 3 - 4 tablespoons of cocoa powder to the batter and mix together.

  9. In both the plain and chocolate batters, add the non-dairy milk and whisk together.

  10. Spoon the plain batter evenly in to 12 cupcake cases.

  11. Spoon the chocolate batter in to 12 cupcake cases, alternating with the plain batter cases.

  12. Place the cupcakes on a baking tray and bake in the pre-heated oven for 25 minutes, or until a cocktail stick inserted into the middle of the cake comes out clean.

  13. Once ready, leave to cool on a wire rack.

  14. Your cupcakes are now ready to eat! (HINT: You could even add a dollop of dairy-free icing for that extra special something)

Fruit salad is a great side for these cupcakes. You can mix up different types of fruit of your choosing and then mix together with your favourite sweetener (try honey or maple syrup). Enjoy!
