Ingredients
- 340 ml (1 1/2 cups) low-fat cream, any type
- 85 ml (1/3 cup) honey
- 10 ml (2 tsp) vanilla extract
- 2 large eggs
- 2 large egg yolks
- 1 tsp ground cinnamon
- 1/2 tsp freshly ground nutmeg
- 2 sheets of puff pastry

Preheat oven to 180°C (350°F).

In a saucepan, whisk together low-fat cream, honey, and vanilla extract.

Cook the mixture over medium-low heat for 5 minutes, stirring constantly, until the mixture is steamy and slightly thickened.

Remove the pan from the heat and allow to cool for 10 minutes.

In a medium bowl, whisk together the eggs and egg yolks until pale and frothy.

Gradually add the cooled cream mixture to the egg mixture, whisking constantly.

Add the ground cinnamon and nutmeg, and mix until combined.

Cut the puff pastry into 4 equal rectangles. Bend the ends of each rectangle inwards, overlapping to create a “cup” shape. Place the cups on a greased baking sheet.

Carefully pour the custard into each pastry cup, filling it nearly to the top.
