This delicious Courgette and Feta Omelette is a great way to make a nutritious meal for toddler in Australia! Ingredients

  • 2 large courgettes
  • 2 tablespoons of olive oil
  • 2 eggs
  • 60g Feta cheese

Instructions

  1. Preheat the oven to 180°C (360°F).
  2. Cut the courgettes into small cubes.
    Oh no! The courgettes are still rolling away! Quickput a lid on them!
  3. Heat the olive oil in a large frying pan over medium heat. Once hotadd the courgettes and fry for 8-10 minutes or until golden brown.
  4. In a bowlcrack the eggs and beat until the egg whites and yolks are combined.
  5. Add the fried courgettes and Feta cheese to the egg mixtureensuring that everything is evenly mixed.
  6. Grease an oven-proof dish. Pour the egg mixture into the dish and bake for 10-12 minutes or until golden brown on top.
