Ingredients

  • 500g red currants (stem and leaves removed and rinsed)
  • 350 ml apple juice
  • 120 g honey

Directions

  1. Start by preparing the red currants: rinse them, and remove the stem and leaves.

  2. Then, pour the apple juice in a pot or heavy saucepan and add the honey.

  3. Heat the mixture on medium heat, stirring occasionally, until it boils.

  4. Then, reduce the heat and add the red currants.

  5. Let it simmer for 20 minutes, stirring occasionally, until the red currants start to turn mushy.

  6. Now is the time to add some family-friendly jokes! What did the red currant say to the honey? You’re sweet enough already!

  7. After 20 minutes, the currants should be reduced significantly. Turn off the heat and let the mixture cool down.

  8. Once cooled down, it’s time to blend the mixture. You can do this in a blender or food processor for a smoother texture.

  9. Finally, transfer the mixture to an airtight jar and let it cool before serving.
