Ingredients

  • 4 duck legs
  • 2 plums
  • 4 tablespoons of honey
  • Freshly ground pepper to taste
  • 2 bay leaves
  • 2 garlic cloves
  • 2 shallots
  • 2 tablespoons of vegetable oil
  • 150 mL duck or goose fat

Directions

  1. Preheat oven to 350°F (180°C).

  2. Cut shallots and garlic.

  3. Heat the oil in a roasting pan over medium-high heat.

  4. Add the duck legs and sear the skin until golden brown and crispy, about 3 minutes per side. Remove the duck legs from the pan and set aside.

  5. Add the shallots and garlic to the pan and cook for 2 minutes, stirring occasionally.

  6. Add the plums, honey and bay leaves to the pan. Stir to combine and cook for another 2 minutes.

  7. Add the duck legs back to the pan, skin side up, and pour over the duck fat.

  8. Cover the pan with foil and bake in the preheated oven for 90 minutes, or until the duck is cooked through.

  9. When ready to serve, transfer the duck legs to a plate and sprinkle with freshly ground pepper.

Serve with roasted potatoes and a green salad for a complete meal that the whole family will enjoy!
