Coconut Lentil Dahl

Ingredients

  • 75 g split red lentils
  • 2 tablespoons coconut oil
  • 1 onionfinely diced
  • 2 cloves of garliccrushed
  • 2 cm piece of gingergrated
  • 1 teaspoon turmeric
  • 2 cups vegetable stock
  • 1 cup coconut milk

Instructions

  1. Place lentils into a fine mesh strainer and rince them under cold tap water until the water runs clear.

  2. In a large saucepanheat the coconut oil over medium heat and cook the oniongarlic and ginger until they are lightly golden.

  3. Add the turmeric and cook for a further 30 seconds.

  4. Add the lentils and stock to the pan and bring the mixture to the boil.

  5. Reduce the heat to low and simmer for 15 minutes.

  6. Add the coconut milkstir and continue to simmer for a further 10 minutes.

  7. Joke: Serve with a side of fun!
