INGREDIENTS

  • 8 large clams, shells removed and hollowed
  • 2 tablespoons (30 mL) virgin olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons (30 mL) freshly chopped parsley
  • 2 tablespoons (30 mL) gluten-free breadcrumbs
  • 1 teaspoon (5 mL) freshly chopped cilantro
  • 2 tablespoons (30 mL) freshly squeezed lemon juice
  • ½ teaspoon (2 mL) Italian seasoning
  • ¼ teaspoon (1 mL) freshly ground black pepper

DIRECTIONS

  1. Preheat oven to 350°F (177°C). Line a baking sheet with aluminum foil.
  2. Place clams on the prepared baking sheet.
  3. In a small bowl, mix together olive oil, garlic, parsley, breadcrumbs, cilantro, lemon juice, Italian seasoning, and black pepper.
  4. Divide the mixture evenly among the clams on the baking sheet.
  5. Bake in the preheated oven for 15-20 minutes.
  6. Serve warm or at room temperature with your family’s favorite sides, and enjoy!
