  • 1 shallot (diced)
  • 2 cans of clams (6.5 ounces each)
  • 1/3 cup of whole-wheat flour
  • 2 cups of Half and Half
  • 1 teaspoon of Parsley flakes (for garnish)

Instructions

  1. Prepare the vegetables: Begin by prepping the vegetables. Start by melting butter in a large saucepan over medium- high heat. Thenadd the diced potato cubesgarlicceleryand shallot to the melted butter.

  2. Time to Saute: Now it’s time to saute the vegetables for about 7-8 minutesstirring occasionallyuntil the vegetables are cooked and beginning to turn golden brown. *Pro-tip: When you’re feeling overwhelmedtake a deep breath and sauté away your stress!   3. Add the broth and clams: Pour the vegetable broth and the two cans of clams (including the juice) into the saucepan with the sautéed vegetables.
