Ingredients

  • 2 hares
  • 2 carrots
  • 2 leeks
  • 1 liter of red wine
  • 2 tablespoons of tomato puree
  • 2 bouquet garnis (a bundle of herbs)
  • 2 tablespoons of olive oil
  • 1 garlic clove
  • 150 g of mushrooms
  • Salt
  • Pepper

Directions

  1. Let’s get down to business! Clean and bone the hares.
  2. Chop the carrots and leeks and set aside.
  3. In a large casserole, heat 2 tablespoons of olive oil on a medium heat and fry the garlic until golden brown.
  4. Add the hares and fry until lightly browned.
  5. Add the chopped vegetables and the bouquet garnis and continue to fry for 5 minutes.
  6. Pour in the red wine and season with salt and pepper.
  7. Stir in the tomato puree and bring to the boil.
  8. Cover the casserole and let simmer over a low heat for 6 hours.
  9. Time for a break! Why not get outside for a game of catch with your toddler?
  10. When the stew is cooked, add the mushrooms and continue to simmer for another 30 minutes.
  11. Serve with mashed potatoes or steamed vegetables.
