Ingredients

  • 1 kg of fresh sauerkraut
  • 2 tablespoons of vegetable oil
  • 1 large white onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of flour
  • 250 ml of dry white wine
  • 0.5 L of chicken broth or vegetable broth
  • 1 teaspoon of caraway seeds
  • 1 teaspoon of mustard seeds
  • 500 g of small potatoes, cut into halves
  • 2 smoked pork neck, cut into thick slices
  • 100 g of smoked bacon cubes
  • 70 g of cooked ham
  • 1 large firm apple, cored and cut into quarters
  • 2 tablespoons of butter
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 350°F (175°C).

  2. In a large pot, heat the oil over medium heat. Add the onions and garlic and cook, stirring occasionally, for 5 minutes or until softened.

  3. Add the flour and stir for another 2 minutes. Add the wine and stir to combine.

  4. Stir in the sauerkraut and the broth. Add the caraway and mustard seeds. Bring to a boil, reduce the heat and simmer for 20 minutes.

  5. Add the potatoes, pork neck, bacon, ham and apple. Season with salt and pepper.

  6. Place the mixture in a large ovenproof dish and dot with the butter. Cover with foil and bake for 1 hour.

  7. Remove the foil and bake for another 30 minutes.
