Ingredients:

  • 8 small (13 cm) Wholemeal Tortilla Shells
  • 100g Chorizo Sausage, skinned and cut into small cubes
  • 1 Red Onion, peeled and finely chopped
  • 1 Red Pepper, finely chopped
  • 250g Tinned Black Beans, drained
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • Olive Oil

Instructions

  1. Heat a large frying pan and add the Chorizo cubes. Cook for 5 minutes until browned, then remove and set aside.
  2. Add the Onion to the pan and fry for 5 minutes until softened.
  3. Add the Red Pepper and cook for a further 2 minutes.
  4. Add the drained Black BeansCumin and Paprika to the pan and stir.
  5. Return the cooked Chorizo to the pan and stir.
  6. Heat the Tortilla Shells in the Microwave for 10 seconds.

  7. Roll up each Tortilla and secure with a toothpick. (Handy Tip: Use a toothpick to secure the Tortilla or else it’ll roll away from you like a runaway train!)
  8. Heat a non-stick frying pan over a medium heat and place each Tortilla in the pan.
  9. Cook for 2 minutes each side until lightly browned.
  10. Serve with a side salad and enjoy!
