Ingredients

  • 1.4kg of boneless, skinless Chicken Breast, cubed
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of butter
  • ½ of an onion, finely diced
  • 1 teaspoon of garlic, minced
  • 1 teaspoon of ginger, minced
  • 2 tablespoons of all-purpose flour
  • 1 x 400ml tin of coconut milk
  • 2 tablespoons of garam masala
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground turmeric
  • 1-2 teaspoons of paprika
  • 2 tablespoons of yogurt
  • Juice of half a lemon
  • Salt and pepper, to taste

Directions

  1. In a large bowl, mix together the cubed chicken, vegetable oil, and spices (garam masala, cumin, coriander, turmeric, and paprika).

  2. Heat a large non-stick pan over medium-high heat and add the chicken. Fry for about 5 minutes, stirring occasionally.

  3. Once the chicken is cooked through, reduce the heat to medium and add the butter, onion, garlic, and ginger. Fry for another 3-4 minutes, stirring occasionally.

  4. Add the flour and fry for 1-2 minutes.

  5. Add the coconut milk and stir until mixture thickens, about 2-3 minutes.

  6. Reduce the heat to low and stir in the yogurt and lemon juice.

  7. Simmer the sauce for 5 minutes, stirring occasionally.

  8. Add salt and pepper to taste and serve over rice.
