Ingredients

  • 350 g cooked boneless and skinless chicken breasts, cut into small cubes
  • 1 red pepper, finely diced
  • 2 cloves of garlic, minced
  • 2 cups (475 ml) chicken broth
  • 1 teaspoon (5 ml) chili powder
  • 1 teaspoon (5 ml) ground cumin
  • 1/2 teaspoon (2.5 ml) oregano
  • 1/2 teaspoon (2.5 ml) paprika
  • 8 8-inch (20 cm) whole wheat tortillas
  • 1 can (400 g) black beans, rinsed and drained
  • 240 ml low-sodium salsa
  • 2 cups (225 g) grated Monterey Jack cheese
  • 1 cup (120 g) cooked long-grain brown rice, uncooked

Directions

  1. Preheat oven to 180°C (350°F).
  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add cubed chicken, red pepper, and garlic; cook until chicken is no longer pink and vegetables are tender, about 5-7 minutes.
  3. Add chicken broth, chili powder, cumin, oregano, and paprika to the skillet and bring to a simmer. Simmer for 5 minutes.
  4. In a large baking dish, layer 4 whole wheat tortillas. Spread 1/2 can of black beans over the tortillas and top with 1/2 of the chicken mixture. Sprinkle with 1/2 cup of cheese.
  5. Add another layer of 4 tortillas, followed by the remaining black beans, chicken mixture, and cheese.
  6. Bake in preheated oven for 25 minutes.
  7. Meanwhile, cook the rice according to package instructions.
  8. After 25 minutes, remove the casserole from the oven and spread the salsa over the top. Sprinkle with remaining 1/2 cup of cheese.
  9. Bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
  10. Serve with cooked rice and enjoy!
