Ingredients

  • 8 flour tortillas, 20 cm size
  • 500g chicken breast, boneless and skinless
  • 4 tablespoons of olive oil, separated
  • 2 tablespoons of lemon juice
  • 1 teaspoon of garlic powder
  • 400g can of corn kernels, drained
  • 1 caesar salad dressing, store bought
  • 200g of parmesan cheese, grated
  • 2 tablespoons of black pepper
  • 2 tablespoons of red chilli flakes

Directions

  1. Preheat the oven to 220°C/425°F.
  2. Cut the chicken into 1 cm cubes and place onto a greased baking sheet.
  3. In a small bowl, mix together 2 tablespoons of the olive oil, lemon juice, garlic powder, and black pepper.
  4. Brush the chicken cubes with the mixture and bake for 10 minutes or until golden brown.
  5. While the chicken is in the oven, place the tortillas onto a clean baking sheet.
  6. In another small bowl, mix together the rest of the olive oil, the corn kernels, and the caesar salad dressing.
  7. Spread the mix onto the tortillas, leaving the edges free of any mix.
  8. Sprinkle the parmesan cheese and red chili flakes onto the mix.
  9. Bake the tortillas in the preheated oven for 8 minutes.
  10. Carefully remove the tortillas from the oven and place onto a plate and let cool for a few minutes.
  11. Place the cooked chicken onto the center of the tortilla and roll the wrap up carefully.
  12. Serve the wraps on individual plates and enjoy!
