  • 1 leek, diced
  • 2 cloves of garlic, finely chopped
  • 400 g broccoli, cut into small pieces

  • 200 g of grated cheddar cheese
  • fresh thyme
  • ground black pepper
  • olive oil

Instructions

  1. Heat a large pot over medium-high heat.
  2. Add 50 grams of butter and when melted, add the diced leek and garlic.
  3. Cook for 3-4 minutes, stirring occasionally.
  4. Add the broccoli and stir to combine with the vegetables.
  5. Pour in the chicken/vegetable broth and bring to a boil.
  6. Reduce heat to lowcover the pot and simmer for 10 minutes.
  7. Add the cream and stir to combine.
  8. Turn off the heat and use a blender or hand immersion blender to blend the soup until smooth.
  9. Return the soup to the stoveand add the cheddar cheese.
  10. Cook over low heat for 2-3 minutes, stirring constantly, until the cheese is melted and incorporated.
  11. Add fresh thyme and season with ground black pepper.
  12. Serve with a drizzle of olive oil.
