Ingredients
  • 1 ¼ cups of dashi
  • 1 teaspoon of soy sauce
  • 3 tablespoons of mirin
  • 3 teaspoons of sake
  • 2 large eggs
  • 15 grams of bonito flakes
  • 12 grams of dried shiitake mushrooms
  • 150 grams of firm tofu cubed
  • 3 tablespoons of minced green onion
Directions
  1. In a saucepan over low heat add the dashi soy sauce mirin and sake. Stir until combined and remove from heat.

  2. Beat the eggs until the yolks and whites are completely blended.

  3. Add the bonito flakes shiitake mushrooms and tofu to the saucepan with the dashi mixture.

  4. Gradually pour in the beaten eggs into the saucepan while stirring in a circular motion.

  5. Return the saucepan to the stove over medium heat. Simmer the chawanmushi ohitashi for 7 minutes until it forms a soft custard-like texture.

  6. Remove the ohitashi from heat and let it cool for a few minutes before serving.

  7. To serve top the ohitashi with green onion and give it a light sprinkle of bonito flakes.
