Ingredients
- 90g tofu, cut into 2 cm cubes
- 225g boneless, skinless chicken thighs
- 370g potatoes, cut into 2 cm cubes
- 1 large carrot, peeled and cut into thin matchsticks
- 500ml dashi (fish or seaweed)
- 2 tablespoons soya sauce
- 2 tablespoons mirin
- 1 tablespoon vegetable oil
Directions
- Heat a large pot over medium heat and add the vegetable oil.
- When the oil is hot add the chicken and stir fry until it is no longer pink.
- Add the tofu, potatoes and carrots and stir fry until the vegetables are slightly softened.
- Add the dashi, soya sauce and mirin and bring to a boil.
- Reduce the heat to low and simmer, stirring occasionally, for one hour.
- Serve hot and enjoy!
