Cashew Chicken Curry

Ingredients

  • 50g cashew nuts
  • 2 chicken breasts
  • 1 teaspoon of garam masala
  • 1 teaspoon of ground coriander
  • 1 onion
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • 300ml of chicken stock
  • Handful of chopped fresh coriander (optional)

Preparation

  1. In order to prevent any accidents, pre-grind the cashews so that they are not in sizes bigger than a fingernail. You could even use pre-ground cashews if you can find them.
  2. Cut the chicken breasts into 1-2 cm cubes and season with the garam masala and ground coriander.
  3. Chop the onion and garlic finely.
  4. In a panheat the olive oil on a medium heat and add the chicken cubes. Cook for 5-7 minutes until the chicken is golden brown and cooked through.
  5. Add the chopped onion and garlic to the pan and fry for 5 minutes until soft and golden brown, stirring occasionally.
  6. Add the chicken stock, bring to the boil and simmer for 10 minutes.
  7. Add the pre-ground cashews and cook for an additional 10 minutes.
  8. Garnish with the fresh coriander (optional) and serve!
