Cashew Chicken Curry
Ingredients
- 50g cashew nuts
- 2 chicken breasts
- 1 teaspoon of garam masala
- 1 teaspoon of ground coriander
- 1 onion
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 300ml of chicken stock
- Handful of chopped fresh coriander (optional)

Preparation
- In order to prevent any accidents, pre-grind the cashews so that they are not in sizes bigger than a fingernail. You could even use pre-ground cashews if you can find them.
- Cut the chicken breasts into 1-2 cm cubes and season with the garam masala and ground coriander.
- Chop the onion and garlic finely.
- In a panheat the olive oil on a medium heat and add the chicken cubes. Cook for 5-7 minutes until the chicken is golden brown and cooked through.
- Add the chopped onion and garlic to the pan and fry for 5 minutes until soft and golden brown, stirring occasionally.
- Add the chicken stock, bring to the boil and simmer for 10 minutes.
- Add the pre-ground cashews and cook for an additional 10 minutes.
- Garnish with the fresh coriander (optional) and serve!
