Ingredients

  • 1 tablespoon of sunflower oil
  • 2 cloves of garlicpeeled and sliced
  • 2 cups of finely chopped carrots
  • 2 cups of vegetable stock
  • 2 tablespoons of toasted cashew nuts
  • 1/2 teaspoon of ground black pepper

Directions

  1. Heat a medium-sized saucepan over a medium heat.
  2. Add the sunflower oil and garlic to the pan and cook for 1 minute, stirring regularly.
  3. Add the chopped carrots to the pan and cook for 3 minutesstirring regularly.
  4. Pour the vegetable stock into the pan and bring to the boil. Cook for 10 minutes, stirring every few minutes.
  5. Reduce the heat to low and use a hand blender to blend the soup until it is creamy.
  6. Add the toasted cashew nuts and ground black pepper and stir until well combined.
  7. Serve and enjoy your Carrot and Cashew Soup!
