  • 4 cod fillets, each about 150-200 g
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 2 carrots, cut into rounds
  • 1 onion, sliced
  • 1 leek, sliced
  • 400ml vegetable broth
  • 2 tablespoons of tomato puree
  • 2 tablespoons of chopped fresh parsley
  • 2 teaspoons of fresh thyme

Directions

  1. Preheat the oven to 190°C.

  2. Place the cod fillets in an oven-proof dish.
