Ingredients
- 2 tbsp extra-virgin olive oil
- 1 large onion, diced
- 2 - 3 cloves garlic, minced
- 1 medium-sized butternut squash, peeled, de-seeded, and diced
- 3 cups vegetable broth
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 1/4 cup milk
Directions
- Heat the oil in a large pot over medium heat.

Add the onions and garlic. Cook, stirring occasionally, until the onions are soft and translucent, about 5 minutes.

Add the butternut squash and cook for 3 minutes.

Add the vegetable broth, nutmeg, cinnamon, and milk. Bring to a simmer and cook until the squash is tender, about 10 minutes.

Using a hand immersion blender, puree the soup until smooth.
