Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 large onion, diced
  • 2 - 3 cloves garlic, minced
  • 1 medium-sized butternut squash, peeled, de-seeded, and diced
  • 3 cups vegetable broth
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1/4 cup milk

Directions

  1. Heat the oil in a large pot over medium heat.  
  2. Add the onions and garlic. Cook, stirring occasionally, until the onions are soft and translucent, about 5 minutes.

  3. Add the butternut squash and cook for 3 minutes.

  4. Add the vegetable broth, nutmeg, cinnamon, and milk. Bring to a simmer and cook until the squash is tender, about 10 minutes.

  5. Using a hand immersion blender, puree the soup until smooth.

  6. Serve warm with a sprinkle of nutmeg and cinnamon, or any of your toddler’s favorite toppings.
