Ingredients

  • 2 tablespoons of olive oil
  • 1 small onion, finely chopped
  • 250 g of cooked white rice
  • 3 tablespoons of butter
  • 350 g of cooked chicken, pulled into bite-sized chunks
  • 1 teaspoon of garam masala
  • 1 teaspoon of ground coriander
  • 2 tablespoons of tomato paste
  • 1 teaspoon of minced ginger
  • 1 cup of frozen peas

Directions

  1. Heat the oil in a large non-stick pan over medium-high heat.
  2. Add the onion and cook, stirring, for about 3 minutes or until softened.
  3. Add the cooked rice and cook, stirring, for 2 minutes or until heated through.
  4. Reduce the heat to low and add the butter.
  5. Add the chicken, garam masala, coriander, tomato paste, and ginger.
  6. Cook, stirring, for 2 minutes or until everything is combined and heated through.
  7. Add the peas and stir to combine.
  8. Cook for a few minutes until everything is hot, stirring occasionally.
  9. Remove the pan from the heat and serve while hot.
