- Preheat the oven to 375°F (190°C).
- Meanwhile, melt the butter in a saucepan over medium heat. Once melted, add the shallot, celery, and carrots and cook for 5 minutes.
- Add parsley, nutmeg, and lemon zest and cook, stirring for another 2 minutes.
- Add the chicken to the saucepan and cook for another 5 minutes.
- Sprinkle the flour over the saucepan and stir.
- Add the milk and cook until the sauce thickens.
- Transfer the mixture into a big bowl and let it cool for 15 minutes.
- Once cooled, add the eggs to the bowl and mix everything together.
