Ingredients

  • 2 Bombay ducks, cut into 2 cm cubes
  • 2 potatoes, cut into 2 cm cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cinnamon powder
  • 2 tablespoons vegetable oil
  • Freshly ground black pepper, to taste

Directions

  1. Heat a large non-stick skillet over medium heat.

  2. Add the potato cubes to the skillet and cook for about 5 minutes until golden brown, stirring occasionally with a wooden spoon.

  3. Add the Bombay duck cubes and onion, and cook for another 5 minutes, stirring occasionally.

  4. Add the garlic and all the spices, and cook for another 3 minutes, stirring occasionally.

  5. Add the oil and black pepper to the skillet, stir to combine, and cook for about 2 minutes.

  6. Serve the Bombil Fry with steamed basmati rice and a side of raita (yogurt dip). Enjoy!
