Ingredients

  • 4 pieces boneless veal shoulder, each weighing around 300 grams
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 sweet potato, peeled and diced
  • 2 carrots, diced
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons flour
  • ¼ teaspoon black pepper
  • 1 litre vegetable stock
  • 120 grams mushrooms, wiped clean and sliced
  • 4 tablespoons butter
  • 4 tablespoons double cream

Directions

  1. "Let's get this show on the road, chefs!" Preheat the oven to 180C/350F.

  2. Heat the oil in a large saucepan over a medium heat.

  3. Add the garlic and onion and sauté for 2-3 minutes until the onion is starting to soften.

  4. "Are the vegetables ready yet, kids?" Add the sweet potato, carrots, bay leaves, parsley, flour, pepper and vegetable stock and bring to the boil. Simmer for 15 minutes, stirring occasionally.

  5. Meanwhile, rub the veal shoulder pieces with the butter and season with black pepper. Place in a baking tray and cook for 25 minutes.

  6. Remove the veal from the oven and set aside.

  7. Add the mushrooms to the vegetable mixture and simmer for a further 10 minutes.

  8. "Time to plunk the finishing touches!" Add the double cream and stir to combine.

  9. Place the veal pieces in the casserole dish and pour the mushroom and vegetable mixture over the top.

  10. Bake for a further 10 minutes.
