Ingredients

  • 1kg cubed lotte (cut into even pieces, 2 x 2 cm cubes)
  • 2 diced onions
  • 1 teaspoon vegetable oil
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 750g chicken broth
  • 1 grated carrot
  • 1 tablespoon freshly chopped parsley
  • Pepper
  • ¼ teaspoon nutmeg
  • 2 egg yolks
  • 1 tablespoon heavy cream

Directions

  1. Preheat oven to 180°C.

  2. On a baking sheet, place the lotte cubes and bake for 15 minutes.

  3. In a large saucepan, heat the vegetable oil and butter over medium heat.

  4. Add the onions and cook until translucent.

  5. Reduce the heat to low and stir in the flour, stirring continuously until it forms a paste.

  6. Gradually add the chicken broth and stir until the mixture is smooth.

  7. Add the grated carrot, parsley, pepper, and nutmeg.

  8. Simmer for 10 minutes or until the sauce is slightly thickened.

  9. In a small bowl, mix together the egg yolk and cream until smooth.

  10. Remove the sauce from the heat and stir in the egg mixture.

  11. Carefully stir in the lotte cubes and combine.

  12. Pour the blanquette into an oven-safe dish and bake for 45 minutes.
