Ingredients

  • 300g Beetscooked and cut into small cubes
  • 100g Feta cheesecrumbled
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh dillfinely chopped
  • Freshly ground black pepperto taste

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).

  2. Wash and clean the beets. Cut off the ends and place in a baking dish. Roast for 20 minutesor until beets are tender.

  3. Once the beets have cooledcut into small cubes.

  4. In a medium bowlcombine beetsfeta cheeseextra virgin olive oillemon juiceand fresh dill.

  5. Season with freshly ground black pepper and mix until everything is well combined.
