Ingredients

  • 800 grams of lean beef chuckcubed
  • 2 tablespoons of oil
  • 2 large carrotspeeled and chopped
  • 2 celery stalkschopped
  • 2 onionspeeled and chopped
  • 2 cloves of garlicfinely chopped
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of pepper
  • 4 cups of low-sodium beef stock
  • 2 tablespoons of tomato paste
  • 2 medium potatoespeeled and cubed

Directions

  1. In a large pot over high heatadd oil.

  3. Cook the beef until all sides are lightly browned.
  4. Remove the beef from the pan and set aside.
  5. Reduce the heat to medium-low and add the carrotsceleryonionsgarlicthymeand pepper.

  7. Add the beef stock and tomato paste to the pot and stir until the tomato paste is dissolved.
  8. Return the beef cubes to the pot.
  9. Bring the stew to a boil.
  10. Reduce the heat and simmer the stew for 45 minutes to an houror until the beef is tender.
  11. Add the potatoes and continue to simmer for another 15 minutes.
  12. Serve the stew hot with a sprinkle of chopped parsley (optional).
