Ingredients

  • 2 Ripe Bananasdiced (100g)
  • 1 Pineapplediced (100g)
  • 100g Desiccated Coconut
  • 2 Eggs
  • 2 tablespoons Vegetable Oil
  • 200g Gluten Free Flour
  • 2 tablespoons Baking Powder
  • 1 teaspoon Ground Cinnamon

Instructions

  1. Preheat oven to 160°C.
  2. Grease and line a 20cm round baking tin with baking paper.
  3. In a blenderblend the bananas and pineapple until desired consistency is achieved.
  4. In a bowlmix together the desiccated coconuteggsvegetable oilgluten free flourbaking powder and ground cinnamon.
  5. Add in the banana and pineapple mixture and stir until all ingredients are combined.
  6. Pour the mixture into the baking tin.
  7. Bake for 40 - 45 minutes or until a skewer inserted into the middle comes out clean.
  8. Let the cake cool in the tin before carefully transferring to a wire rack.
  9. Slice and ENJOY with a big SMILE!
