Banana Pancakes

Ingredients (Makes approx. 8-10 pancakes):
- 2 medium-size ripe bananas
- 2 eggs
- 1 teaspoon of vanilla extract
- 2 tablespoons of vegetable oil
- 230g all-purpose flour
- 250ml cold water
- 2 tablespoons of baking powder
Preparation:
- Mash the bananas with a fork until they are mostly smooth.
- Crack two eggs into a bowl and mix them together.
- Add in the mashed bananasvanilla extract and vegetable oil and mix it together with a spoon.
- In a separate bowlsift the flour and baking powder together.
- Add in the cold water and mix until you have a thick batter-like mixture.
- Add the banana mixture to the flour mixture and mix together until combined.
- Heat a greased pan over medium-high heat.
- Take 1-2 spoonfuls of the batter and spoon it onto the pan.
- Cook each side for about one minuteor until golden brown.
