  • 1 small onion (finely chopped)
  • 4 cloves of garlic (minced)
  • 4 halibut fillets (4 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh oregano (minced)
  • 1 teaspoon fresh thyme (minced)
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. In a small bowlcombine the oreganothyme and lemon juice.
  3. Grease a baking dish with 1 tablespoons of olive oil and place the halibut fillets in the dish.
  4. Spread the chopped onion and minced garlic over the fillets.
  5. Drizzle the remaining olive oil and the thyme-oregano-lemon juice mixture over the fillets.
  6. Bake the halibut for 25 minutes.
  7. Take out and serve hot with a side of greens and vegetables.
